All cuvées come from old vines aged 45 years on grassy soils. In the fourth generation, Hélène Beaugrand now manages her estate on 3 hectares. She attaches great importance to family heritage and craftsmanship while leaving a large part of spontaneity in her creations. Currently, the estate produces about 20,000 bottles and offers six different champagnes.

With each harvest, there is a significant disparity between the plots of old vines located at the bottom of the hill and those on the hillside. Le Grand Carré is a plot located at the bottom of the hill from which one can admire our magnificent grassy and wooded hillside. I harvest it at maturity first to retain the crispness, freshness, and fruity notes of the chardonnays.

Situated halfway up the hillside, its south-facing exposure allows for harvesting well-gilded grapes at the end of the harvest. Offering aromatic power and a strong balance, the typicality of this Chardonnay allows for the creation of a powerful and refined exceptional cuvée. From this plot, I adore looking into the distance at the unique square tower of the Troyes Cathedral in the morning mist.
